Mint chocolate chip

  • 420 g half and half
  • 72 g milk
  • pinch of salt
  • 70 g power sugar

mix and bring almost to boil

add

  • 5 hand full of mint leaves, washed, crushed a bit in a mortar

let sit for 25 min

drain leaves out, get maximum amount of milk out of left over leaves

prepare

  • 2 table spoons of corn starch
  • 3 table spoons of milk

mix well,

add to milk mixtures, heat until it thickens. let moisture evaporate during that process (no lid)

cool mixture down (I kept stirring and used a water/ice bath for faster cooldown)

add

  • 1/2 tea spoon vanilla extract

put in ice machine

shortly before end, add

  • 112 g chocolate chips

result

-right after: nice and smooth, no butterfat noticeable, mint flavor OK (not too strong), perhaps too much chocolate? perhaps a bit too much corn starch?
